Well Hip, despite the best efforts of your fine women I manged to get myself back to blighty. Didn't manage to buy enough stuff to finish my rig but got some memory at a very good price (spent about 6 hours in Fry's, that place is huge!)
I believe the majority of the Falcon community are obsessed with getting totally realistic cockpit replicas to fly in (wouldn't we all if we could afford it) However I belive touch buddy is one step ahead of this. It allows for a totally flexible generic cockpit, which can be used for all aircraft. It also gives a nice futuristic feel, and more importantly allows my simpit to fit in my very small abode. So if the Falconeers are not using it it's their loss in my opinion.

With Paintshop Pro I found the best way to start is to follow the tutorials included with it, you get to draw some basic stuff, but it teaches you the majority of the features. I think the results are worth the initial effort.
