There is no limit with TB AFAIK. The only limit with Windows is what you can plug into it as a monitor. Many newer video cards have two outputs. Add another card and you have more. Plus, there are new touchscreens that just need a USB slot. So, I think you can connect a bunch.

Also, there are several users who have screenshots of their rigs with multiple touchscreens.
